Balkan Baked Bliss Bulgarian Sirene po Shopski with Garlic

Experience true Balkan comfort with this ridiculously easy and flavourful baked cheese dish. We've added plenty of garlic to give this Bulgarian classic an extra kick of aromatic bliss.

Preheat your oven to 200°C (180°C fan).
Divide half the butter between two individual earthenware pots (gyuvecheta) or small ovenproof dishes. Layer the sliced tomatoes, green peppers, and sliced garlic in the dishes.
Place a 200g block of cheese in each dish on top of the vegetables. Sprinkle with paprika and savory (or oregano). Top with the remaining butter.
Bake for 15-20 minutes, until the vegetables are soft and the cheese is heated through.
Carefully remove the dishes from the oven. Make a small well in the top of the cheese and crack an egg into each. Return to the oven for a further 5-7 minutes, or until the egg whites are set but the yolk is still runny. Garnish with fresh parsley and serve immediately with crusty bread.
