Prepare the Garlic Chips
Thinly slice 2 cloves of garlic. Heat the vegetable oil in a small pan over medium-low heat. Add the sliced garlic and fry slowly until golden brown and crispy. Be careful not to burn them. Remove the crispy garlic chips with a slotted spoon and place them on a paper towel-lined plate to drain. Reserve the garlic-infused oil.
Cook the Udon
Cook the udon noodles according to package instructions. If using frozen udon, simply boil for 1-2 minutes until loosened. Drain well and set aside.
Make the Garlic Butter Sauce
In a large pan or wok, melt the butter over medium heat. Add the remaining 2 cloves of thinly sliced garlic (or finely minced, as preferred for the sauce). Sauté until fragrant, about 30 seconds to 1 minute. Do not brown.
Combine and Season
Add the drained udon noodles to the pan with the garlic butter. Pour in the soy sauce, mirin, and sugar. Toss everything together until the noodles are well coated and heated through, about 1-2 minutes.
Serve
Divide the udon between serving bowls. Top generously with the crispy garlic chips and chopped green onions or chives. Drizzle with a little of the reserved garlic-infused oil if desired. Serve immediately.
