Prepare the Beans
In a medium bowl, combine the rinsed and drained cannellini beans, minced garlic (or roasted garlic), finely chopped rosemary, and 1/4 cup extra virgin olive oil.
Mash the Mixture
Using a fork or potato masher, lightly mash the beans until they are mostly broken down but still retain some texture.
Season and Adjust
Stir in the lemon juice (if using), salt, and freshly ground black pepper. Taste and adjust seasonings as needed.
Toast the Bread
Slice the baguette into 1/2-inch thick pieces. Lightly brush or every so often drizzle with olive oil and toast in a preheated oven at 375°F (190°C) for 5-7 minutes, or until golden and crisp. Alternatively, toast in a pan or toaster until golden.
Assemble and Serve
Spoon a generous amount of the bean mixture onto each toasted crostini. Drizzle with a little more olive oil and sprinkle with red pepper flakes or fresh parsley, if desired. Serve immediately for optimal flavor and texture.
