Ingredients

  • 1 flank steak (matambre), about 2 lbs (900g), trimmed of excess fat.
  • 1 quart (1 liter) whole milk, for tenderizing.
  • 2-3 cloves garlic, thinly sliced.
  • 1 tsp dried oregano.
  • Salt and freshly ground black pepper to taste.
  • **For the Garlicky Tomato Sauce:**.
  • 2 tbsp olive oil.
  • 4-6 cloves garlic, minced.
  • 1 can (28 oz / 800g) crushed tomatoes.
  • 1 tsp dried oregano.

  • A handful of fresh basil leaves, torn.

Instructions

1. Tenderize the Steak

Place the flank steak in a large baking dish. Scatter the sliced garlic over the meat, season with salt, pepper, and oregano, then pour the milk over it until the steak is completely submerged. Cover and refrigerate for at least 8-12 hours. This is the secret to a tender matambre.

2. Make the Garlic Sauce

While the meat is marinating, prepare the sauce. Heat the olive oil in a saucepan over medium heat. Add the minced garlic and cook for about a minute until fragrant, being careful not to burn it.
