Craving a dish that's unapologetically bold and incredibly satisfying? Look no further. This is Sutamina Don, a legendary Japanese rice bowl designed for maximum flavour and energy. Thinly sliced pork belly is stir-fried with a generous amount of garlic and a sweet and savoury soy-based sauce, then served steaming hot over rice. It's the ultimate comfort food with a kick, perfect for garlic lovers seeking a quick and hearty meal.

Ingredients

  • 350g (12 oz) Thinly sliced pork belly, cut into bite-sized pieces.
  • 4-5 large cloves Garlic, finely minced or grated.
  • 1 small piece Ginger, grated (optional.)
  • 1/2 Japanese long onion (negi) or 2-3 spring onions, thinly sliced diagonally.
  • 2 large bowls of freshly cooked Japanese short-grain rice.
  • 2 Egg yolks, for topping.
  • 1 tbsp Vegetable oil.
  • Toasted sesame seeds, for garnish (optional.)
  • Shredded nori seaweed, for garnish (optional.)
  • *For the Sauce:**.
  • 3 tbsp Soy sauce.
  • 2 tbsp Sake (Japanese rice wine.)
  • 2 tbsp Mirin (sweet rice wine.)
  • 1 tsp Sugar.
  • 1 tsp Dashi powder or chicken stock powder (optional, for extra umami.)

Instructions

1. Prepare the Sauce

In a small bowl, whisk together the soy sauce, sake, mirin, sugar, and optional dashi/chicken powder. Set aside.

2. Sauté the Aromatics

Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the minced garlic and grated ginger (if using) and stir-fry for about 30 seconds until fragrant.

3. Cook the Pork

Add the sliced pork belly to the pan. Stir-fry until the pork is cooked through and slightly browned. If a lot of excess fat renders out, you can carefully drain some of it off.

4. Combine

Add the sliced onions to the pan and cook for another minute until they just begin to soften.

5. Sauce it Up

Pour the prepared sauce mixture over the pork and onions. Continue to stir-fry, allowing the sauce to bubble and reduce slightly, coating every piece of pork until glossy. This should only take 1-2 minutes.

6. Assemble the Bowls

Divide the hot cooked rice between two large bowls. Arrange the garlic pork mixture on top of the rice.

7. Finishing Touches

Create a small well in the center of the pork and gently place an egg yolk in it. Garnish with toasted sesame seeds and shredded nori, if desired. Serve immediately and enjoy the power-up!
