Ingredients

  • 10-12 cloves Garlic, peeled.
  • 2 slices Stale bread, crusts removed.
  • 1/4 cup Milk (or water.)
  • 1/2 cup Extra virgin olive oil.
  • 2 tablespoons White wine vinegar (or to taste.)
  • 1/4 cup Fresh parsley, finely chopped.
  • Salt to taste.

Instructions

1. Begin by preparing the garlic

Roughly chop the peeled garlic cloves. In a small bowl, soak the stale bread slices in milk (or water) until softened, then squeeze out any excess liquid.

2. Combine The Soaked Bread And Chopped Garlic

Combine the soaked bread and chopped garlic in a food processor or blender.

3. Process

Process until a smooth paste forms.

4. Slowly Drizzle In The Extra Virgin Olive Oil

Slowly drizzle in the extra virgin olive oil while the processor is running, until the mixture emulsifies and thickens to a creamy consistency.

5. Add The White Wine Vinegar And Finely Chopped Parsley

Add the white wine vinegar and finely chopped parsley, and pulse a few more times to combine.

6. Season With Salt To Taste

Season with salt to taste, adjusting the vinegar if a tangier flavor is desired.

7. Let The Sauce Rest For At Least 30 Minutes
