Discover a healthier yet equally decadent alternative to traditional mashed potatoes with this American classic. Packed with roasted garlic goodness, butter, and cream, it's a velvety side dish that brings robust garlic flavor to any meal.

Ingredients

  • 1 large head (about 2 lbs) cauliflower, cut into florets.
  • 1 whole head garlic.
  • 2 tablespoons olive oil.
  • 1/4 cup (4 tablespoons) unsalted butter.
  • 1/4 cup heavy cream or whole milk.
  • Salt to taste.
  • Freshly ground black pepper to taste.
  • Optional: 2 tablespoons chopped fresh chives or parsley, for garnish.

Instructions

1. Preheat Your Oven To 400

Preheat your oven to 400°F (200°C.)

2. Prepare the garlic

Cut off the very top of the garlic head to expose the cloves. Place it on a small piece of aluminum foil, drizzle with 1 tablespoon of olive oil, and wrap tightly. Roast in the preheated oven for 20-30 minutes, or until the cloves are very soft and golden brown. Once cooled slightly, squeeze the roasted garlic cloves out of their skins.

3. Cook the cauliflower

While the garlic roasts, steam the cauliflower florets until very tender. This typically takes 10-15 minutes in a steamer basket over simmering water, or you can boil them until tender. Drain thoroughly.

4. Mash the cauliflower

Transfer the cooked cauliflower to a large bowl. Add the roasted garlic cloves, butter, heavy cream (or milk), remaining 1 tablespoon of olive oil, salt, and black pepper.

5. Mash until smooth

Using a potato masher, immersion blender, or food processor, mash the mixture until it reaches your desired consistency. For an extra smooth mash, use an immersion blender or food processor.

6. Season and serve

Taste and adjust seasoning as needed. If desired, stir in the fresh chives or parsley before serving. Serve hot as a delicious and garlicky side dish.
