Ingredients

  • 2 tbsp Olive oil.
  • 1 lb (450g) Large shrimp, peeled and deveined.
  • 6-8 cloves Garlic, minced.
  • 1 medium Onion, finely chopped.
  • 1 (14.5 oz) can Crushed tomatoes (or 2 cups fresh, chopped tomatoes.)
  • 1/2 cup Dry white wine or Ouzo (optional, but recommended for authentic flavor.)
  • 1/2 tsp Dried oregano.
  • Pinch of red pepper flakes (optional, for a kick.)
  • Salt and freshly ground black pepper to taste.
  • 4 oz (115g) Feta cheese, crumbled.
  • 2 tbsp Fresh parsley, chopped (for garnish.)

Instructions

1. Prepare the Shrimp

Pat the peeled and deveined shrimp dry with paper towels. Season lightly with salt and pepper.

2. Sauté Aromatics

Heat the olive oil in a large skillet or a shallow, oven-safe pan (like a saganaki pan) over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and red pepper flakes (if using), and cook for another minute until fragrant, being careful not to burn the garlic.

3. Build the Sauce

Pour in the crushed tomatoes, white wine or ouzo, and dried oregano. Bring the sauce to a gentle simmer, stirring occasionally. Reduce the heat to medium-low and let it simmer for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Taste and adjust seasoning with salt and pepper.

4. Cook the Shrimp

Add the seasoned shrimp to the simmering sauce, arranging them in a single layer if possible. Cook for 2-3 minutes per side, just until the shrimp start to turn pink. Do not overcook, as they will finish cooking later.

5. Add Feta and Finish

Sprinkle the crumbled feta cheese evenly over the shrimp and sauce. If your pan is oven-safe, you can place it under a preheated broiler for 3-5 minutes, or until the feta is lightly golden and bubbly. Alternatively, cover the pan and cook on the stovetop for another 2-3 minutes until the feta is melted and warm.

6. Serve

Garnish generously with fresh chopped parsley. Serve immediately with crusty bread for dipping in the glorious garlicky sauce.
