Ingredients

  • 6 bone-in, skin-on chicken thighs.
  • 6 thick slices of smoked bacon.
  • 6-8 cloves of garlic, sliced.
  • 2 red onions, roughly chopped.
  • Salt and freshly ground black pepper to taste.
  • A little water or chicken broth for the pan.

Instructions

1. Prep the Chicken

Preheat your oven to 350°F (180°C). Carefully loosen the skin on each chicken thigh. Take the slices of garlic and push them under the skin of each thigh. Season the chicken generously with salt and pepper.

2. Wrap and Arrange

Wrap a slice of bacon around each seasoned chicken thigh. Place the chopped red onions on the bottom of a roasting pan and arrange the bacon-wrapped chicken thighs on top.

3. Roast to Perfection

Pour a small amount of water or chicken broth into the bottom of the pan to create steam and prevent burning. Cover the pan with a lid or aluminum foil and bake for about 25-30 minutes.
