Ingredients

  • 2 packs (about 14 oz or 400g total) pre-cooked or frozen udon noodles.
  • 4 tbsp unsalted butter.
  • 4-5 cloves garlic, thinly sliced or minced.
  • 2 tbsp soy sauce (shoyu.)
  • 1 tbsp mirin (optional, for a touch of sweetness.)
  • 2 fresh egg yolks (optional, for serving.)
  • 2 green onions, finely chopped.
  • Katsuobushi (dried bonito flakes), for garnish (optional.)
  • Toasted sesame seeds, for garnish (optional.)
  • Freshly ground black pepper.

Instructions

1. Cook The Udon Noodles According To The Package Directions

If using frozen, simply boil for 1-2 minutes until they loosen and are heated through. Drain well and set aside.

2. Heat

While the noodles cook, melt the butter in a large skillet or pan over medium-low heat. Add the garlic and sauté gently for 2-3 minutes until fragrant and lightly golden, being careful not to let it burn.

3. Add The Drained Udon Noodles Directly Into The Pan

Add the drained udon noodles directly into the pan with the garlic butter. Pour in the soy sauce and mirin (if using). Toss everything together for about a minute, ensuring the noodles are thoroughly coated in the glossy sauce.

4. Divide The Noodles Between Two Bowls

If desired, create a small well in the center of the noodles and gently place a fresh egg yolk in it.

5. Mix It Through The Hot Noodles For An Extra

Top with a generous sprinkle of chopped green onions, a pinch of katsuobushi (if using), toasted sesame seeds, and a good crack of black pepper. To eat, break the yolk and mix it through the hot noodles for an extra layer of creamy richness. Serve immediately.
